These flavourful Red Thai Turkey meatballs are the perfect all-occasion food. They can be served on their own as an appetizer, as a main, as part of a big gathering, or as a midweek meal.

Red Thai Turkey Meatballs with Rice

  • 250 turkey mince
  • 80g fragrant jasmine rice
  • 2 egg whites
  • 20g Thai red curry paste
  • 200ml tinned coconut milk
  • 1 onion, diced
  • 1 tsp low sodium soy sauce
  • 1 tsp grated ginger (peeled)
  • 30g of fine breadcrumbs
  • 1 small bunch of coriander, chopped
  • 2 tsp olive oil
  • ½ tsp fish sauce
  • Salt and pepper to taste
  • Lime wedges to serve

  • Place the mince, egg white, soy sauce, breadcrumbs, coriander, ginger, and salt and pepper in a large bowl.
  • Using your hands, mix the ingredients. Once combined, roll the mixture into equal-sized balls.
  • Heat the oil in a pan over medium to high heat.
  • Place the meatballs into the pan and cook until browned, about 5 minutes.
  • Add in the onion and cook for 4-5 more minutes.
  • Add the curry paste, stirring for one minute.
  • Put in the fish sauce and slowly pour in the coconut milk. Stir, then leave to simmer over low heat until the sauce has thickened, and the meatballs are hot and cooked throughout.
  • Cook the rice as per the package instructions.
  • Your turkey will be done cooking when you insert a meat thermometer into the thickest part of its thigh (without touching the bone) and the temperature reads 73°C/165°F. Its juices should also run clear when part of its thigh is pierced with the tip of a knife.
  • Once everything has finished cooking, serve the meatballs and sauce over the fragrant rice. Squeeze over some lime juice and sprinkle any remaining coriander leaves.
