Peri Peri Wings vs. Buffalo Wings: Which one tastes better?

What is Buffalo Sauce?
According to legend, buffalo wings came about in the early 1960s when a restaurant in Buffalo, New York accidentally received a large delivery of chicken wings. At this time, chicken wings were not eaten as widely as they are now. However, not wanting the meat to go to waste, the proprietors of the restaurant decided to make the best of the situation.
They broiled the wings before coating them in a spicy sauce they made up on the spot. To offset the spiciness of the homemade sauce, they served them up with bleu cheese and celery on the side. The recipes can vary, but traditional buffalo wing sauce is made with melted butter, cayenne pepper, and hot sauce. The heat of buffalo sauce depends on which type of hot sauce is used to make it.
The wings were an instant hit and the restaurant soon became famous for their “Buffalo Wings.”
What is Peri Peri Sauce?
Peri-peri sauce is named for the hot pepper used to make it. Also known as piri-piri or the African Bird’s Eye Chili, they naturally grow wild in southern Africa.
They’re very small in size, only about an inch in length, but don’t let their size fool you. These little, bright red peppers pack a lot of heat, averaging over 100,000 on the Scoville scale. For comparison, a jalapeño pepper rarely tops 8,500 Scoville units.
Peri-peri’s flavor makes it suitable for various applications in cooking with it popularly used for peri-peri chicken wings.
Peri-peri sauces can vary, but they typically use many of the same ingredients: crushed peri-peri chilies, lemon, garlic, vinegar, oil, salt, and onion.
Tariq Halal’s Peri Peri Chicken Wings Recipe
Ingredients:
- 4 cloves of garlic, peeled
- 2 red onions, chopped into large chunks
- 120ml of sunflower oil
- 4 tbsp red wine vinegar
- Zest and juice of one lemon
- 1 tsp salt
- 1 tsp smoked paprika
- 2 tsp cayenne pepper
- ¼ tsp dried basil
- ¼ tsp white pepper
- A handful of fresh cilantro chopped
Method:
- The key to this recipe is to blend all the ingredients until they become puree. Add all the ingredients to a food processor or blender and pulse it until you get your desired consistency.
- Once finished, refrigerate it until you’re ready to use it.
- If you’re going to use your peri-peri sauce as a marinade, you can immediately use it after everything fully purees. As a sauce, you should simmer it for at least an hour over low heat.
