How to Prepare and Serve Marrow Bones: Roasting, Broiling, and Grilling Techniques

Found on the menus of the top restaurants around the world, roasted marrow bone is surprisingly easy to make at home. Despite the high price tag that comes with ordering it in fine restaurants, most bone marrow recipes are inexpensive to prepare.

Bone marrow is full of rich flavor and is a good source of minerals and nutrients that humans have been eating since the dawn of time. It’s the soft, fatty tissue located inside the bone and can be served whole or used to make delectable bone broth.

Buying and Preparing Bone Marrow

All animal bones contain marrow that can be eaten as food, but most recipes use veal or beef bones because they contain the most marrow and are more cost-effective.

Slicing marrow bones can be tricky so you may want to ask your butcher to cut them for you until you get the hang of it. A horizontal cut works well for upright bones while vertically gives better access to the marrow if you’re using them in soup or broth.
