Halal Meat Recipes for the Spring Season

Saffron and Citrus Lamb

Ingredients:

  • 675g boneless lamb shoulder
  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 1 whole cinnamon stick
  • 3 cardamom pods, crushed
  • 2 bay leaves
  • ¼ teaspoon saffron threads
  • 1 tablespoon ground turmeric
  • ½ teaspoon dried chili flakes
  • 2 tablespoons olive oil
  • 400ml vegetable stock
  • Zest and juice of 1 lime
  • Freshly chopped mint to garnish

Method:

  • Cut the lamb into 2-3cm chunks.
  • Place the lamb, onion, garlic, and spices in a large plastic food bag. Shake the bag and leave it to marinate overnight in the fridge.
  • When you’re ready to cook the lamb, heat the oil in a non-stick pan.
  • Add the marinated lamb and cook for 10 minutes until it is browned.
  • Add the stock, lime zest, juice, and cinnamon.
  • Bring the mixture to a boil then reduce the heat, cover, and simmer for 3 hours, occasionally stirring.
  • When done, garnish the lamb with mint.

Slow Cooked Moroccan Mutton

Ingredients:

  • 1kg whole bone-in mutton
  • 2 garlic cloves, minced
  • 3 red onions, sliced
  • Zest and juice of 1 large lemon & 1 orange
  • 50g raisins
  • 25g grated fresh ginger
  • 2 tsp oil
  • 2 tbsp Ras El Hanout spice mix
  • 100ml molasses
  • 750ml vegetable stock
  • 1 tbsp tomato purée
  • Fresh coriander and mint, chopped

Method:

  • Preheat the oven to 160°C/140°C Fan
  • Cut several deep slashes into the mutton.
  • Line a roasting tray with a piece of foil large enough to cover the mutton.
  • In a bowl, combine garlic, ginger, oil, and Ras El Hanout. Rub this mixture over the joint and into the slashes you’ve made.
  • Sprinkle the molasses, zest, and juice over the mutton.
  • Combine the vegetable stock and tomato puree, pouring over the joint.
  • Place the joint and onions on the foil and fold the edges of the foil to cover Put in the oven and roast for 4 hours, turning occasionally.
  • Add the raisins 15 minutes before it’s done roasting.
  • Garnish with fresh mint and coriander.
