  7. 500 ml beef stock
  8. 1 tablespoon fresh thyme

Instructions:

  • Preheat Oven- Preheat your oven to 160°C (320°F).
  • Prepare the Beef Knuckle- Rub the beef knuckle with olive oil, salt, and pepper. In a hot oven-proof pot or Dutch oven, sear the beef knuckle on all sides until browned. This will lock in the flavours.
  • Sauté Vegetables- Remove the beef knuckle from the pot and set aside. In the same pot, sauté the garlic, onion, carrots, and celery until softened.
  • Deglaze- Pour a small amount of beef stock into the pot and scrape up any browned bits from the bottom.
  • Roast- Return the beef knuckle to the pot. Add the remaining beef stock and thyme. Cover the pot and place it in the preheated oven.
  • Cook- Roast for about 2.5 to 3 hours, or until the beef is tender and easily shreds with a fork.
  • Serve- Remove the beef knuckle from the pot and let it rest before slicing. Serve with the roasted vegetables and enjoy!
