What is the purpose of marinating meat?

Meat is marinated for two key reasons:

  • To add flavour
  • To tenderise it

Three main ingredients help to tenderise meat. Firstly, anything acidic so wine, vinegar or citrus juice. This breaks down some of the muscle fibres in the meat making it softer although it won’t transform a poor quality or chewy piece of meat into something tender. Next up are ingredients like pineapple, papaya and ginger which contain enzymes that help to tenderise the meat and finally, dairy products such as yoghurt or buttermilk. The best marinades usually include something from each of these three groups but, as with any recipe, the key is in the proportions and what you really like.  Get heavy-handed with any of them and you could spoil the meat. There is still plenty of room for favourite flavours like mustard, cumin, garlic or soy sauce.

Ingredients

Take some Premium Fillet Steak and place the following ingredients in a blender or food processor:

  • 80ml soy sauce
  • 120ml olive oil
  • 80ml fresh lemon juice
  • 4 tablespoons of Worcestershire sauce
  • 1 ½ tablespoons of garlic granules
  • 3 tablespoon of dried basil
  • 1 ½ tablespoon of dried parsley
  • 1 teaspoon of ground white pepper
  • ¼ teaspoon of hot pepper sauce

Blend all the ingredients on a high speed until combined and then pour the marinade over the meat, cover and store in the fridge for up to eight hours before cooking.
