What Makes Wagyu ‘Wagyu’?

Wagyu is beef that comes from Japanese beef cattle. In fact, the name actually means Japanese cow. In Japanese ‘wa’ translates to ‘Japanese’ and ‘gyu’ translates to ‘cattle.’

Full blood Wagyu cattle have an impressive pedigree and can be traced back over 3500 years. They were originally bred as draft animals which is why they developed such a unique intramuscular structure. Today, they are bred for quality and not quantity.

Wagyu cattle contain more intramuscular fat cells, creating the signature gourmet marbling the meat is known for. This tender consistency creates beef that is heavenly and creamy.

The quality of Wagyu beef is measured by a system called Beef Marbling Score (BMS) with 3 being the lowest and 12 the highest. The higher the fat content, the better the flavour and texture of the meat and the higher the BMS score.

Wagyu Health Benefits 

Well-marbled Wagyu has a buttery, umami flavour because it has more fat called monounsaturated fats. These fats are ‘good fats’ and are better for your cholesterol than other types of red meat because they help lower bad cholesterol while improving good cholesterol levels.

The fatty acids in monounsaturated fats also include omega-3 and omega-6 fatty acids that have been associated with a reduced risk of heart disease, cancer, and Alzheimer's.
