Halal Chicken Curry Recipe

Here the Ingredients for the Recipe:

  • 1kg chicken pieces washed and drained
  • 1 large onion sliced
  • 1 cinnamon stick
  • 2 cardamom pods
  • 2 bay leaves
  • 1 star anise
  • 4 large tomatoes, liquidized
  • 4 tablespoons of tomato puree
  • 1 tablespoon of red ginger garlic masala
  • 1 ½ teaspoon of chilli powder
  • 1 teaspoon of salt or to taste
  • 2 teaspoon dhana jeeroo powder
  • Pinch turmeric powder
  • 4 medium potatoes quartered and fried
  • 4 baby marrows grated
  • Chopped fresh coriander

Method:

  1. In a deep pot, heat the oil and onion, cardamom and cinnamon.  Braise until golden
  2. Add the spices and masala
  3. Continue to braise and then add the chicken pieces
  4. Mix well to coat the chicken and cook on a medium heat until all the water has left the chicken
  5. Add the tomatoes, tomato puree and baby marrows and cook reducing down the liquid until the sauce is thick
  6. Add the fried potatoes and then more water to increase the gravy
  7. When the gravy is the consistency that you want, garnish with the coriander and serve with rice
