What is the purpose of marinating meat?

- 80ml soy sauce
- 120ml olive oil
- 80ml fresh lemon juice
- 4 tablespoons of Worcestershire sauce
- 1 ½ tablespoons of garlic granules
- 3 tablespoon of dried basil
- 1 ½ tablespoon of dried parsley
- 1 teaspoon of ground white pepper
- ¼ teaspoon of hot pepper sauce
Blend all the ingredients on a high speed until combined and then pour the marinade over the meat, cover and store in the fridge for up to eight hours before cooking.
